What is Wood Fired Pizza?

Wood fired pizza originated in Naples, Italy in about 1700, when the poor of the city decorated their flat bread with lard, tomatoes, cheese, garlic, herbs and anchovies.  The original pizza vendors operated from open-air stands and would bake their pizza in wood fired pizza carts.

The first pizzeria was Antica Pizzeria Port Alba’ in Naples, Italy.  They expanded their pizza carts to a full-fledged pizzeria with tables and chairs in 1830.

Eventually pizza was baked in special wood fired brick ovens that would heat to over 900 degrees.  At Pizza Furiosa, we use oak wood because it burns hot and and slow.   At 900 degrees our pizzas cook in less than 2 minutes and sometimes much less.

Neapolitan Style Pizza

We make our wood fired pizza the authentic Neapolitan way.  The dough is specially made for the brick oven.  The light “00” Italian flour, copious fresh yeast and intense heat produced by our oven, combine to make a paper thin, crispy, airy and tender crust, with a flavor that only a wood fired can create.  The magic of a wood fired oven is unobtainable in your standard gas fired ovens.

The intense heat and constant airflow generated in the oven seals and cooks the toppings evenly and quickly. You will love how the vegetable toppings are crispier than those produced on pizzas made in the oven.  The cheese does not burn but, instead, lends itself to an appealing color and smoky flavor.

Our brick oven is a heavy weight! it weighs in at over 6,000 pounds. Some places prefer to spend a lot of money and buy their brick ovens overseas. Staying in line with our mission to support local producers and the local economy, we chose to have our oven built right here in Flagstaff, Arizona.

The Pizza Furiosa wood fired brick oven was designed and built by Kevin Ragaller, a.k.a. “Rags” with the help from our Chef, Richard Fernandez.
